Yakitori Chicken Skewers

Ingredients
- 1 large onion
- 1 bell pepper
- 3/4 cup soy sauce
- 3/4 cup mirin
- 2 TBSP rice wine vinegar
- 1 TBSP brown sugar
- 2 lbs chicken breast or thighs, cut into 2 inch pieces
- salt and pepper
- rice or quiona
Instructions
- Start rice or quiona in instant pot and put in fridge once completed.
- Start the grill, make sure to oil the grill before placing skewers on it!
- Chop onion and bell into large chunks
- Begin the sauce. In a small sauce pan over hight heat, combine soy sauce, mirin, vinegar, brown sugar, 3 TBSP of water and green onion tops if you have them. Bring to a boil, stirring to dissolve the sugar. Reduce to medium low and simmer until mixture is thick and syrupy (~20 min). Keep mixutre warm and/or add more water to allow it to brush onto chicken.
- While sauce is reducing, chop the chicken and season with salt/pepper.
- Place 1-2 pieces of chicken with large chunk of onion and bell pepper.
- Brush the skewers with sauce evenly on both sides
- Oil grill and then grill skewers, ~4 minutes per side.
- Reheat rice/quiona.
- Brush the skewers with the sauce 1 minute before completely cooked.
- Serve with hot rice. Top with sesame seeds.
