Waffles

Ingredients

  • 1/3 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all purpose GF flour
  • 1/2 tsp xanthum gum (leave out if already in flour)
  • 4 tsp GF baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 3/4 cups DF milk. 2 cups if using protein powder

Instructions

  • Large bowl, whisk eggs, sugar, vanilla extract and oil together.
  • Add flour (via spoon and level method) and xanthum gum (if using), baking powder, and salt to egg mixture until fully combined. OPTIONAL: Add 1 scoop protein powder.
  • Stir in milk and mix until smooth.
  • Pour batter in preheated/greased waffle machine.
  • Cook according to waffle machine instructions or until golden brown.
  • Top with favorite garnishes (syrup, PB, butter, berries, etc).
