Tuna Poke Bowl

Ingredients

  • 2 TBSP coconut aminos
  • 2 tsp sesame oil
  • 1/4 cup mayo
  • 1/2 tsp rice vinegar
  • 2 TBSP sriracha
  • 3 green onions, chopped and divided
  • 2 cans solid white tuna
  • 2 cup cooked rice
  • 1/2 cup peas or edamame
  • 1/4 cucumber, chopped
  • 1 avocado, sliced
  • 1 carrot, diced or match stick
  • 1/2 cup chopped cilantro
  • 1 tsp sesame seeds

Instructions

  • In medium bowl, combine coconut aminos, sesame oil, mayo, vinegar, sriracha, and 1 green onion.
  • Gently fold in tuna, keeping larger chunks and refridgerate 1 hour.
  • Make rice.
  • Prepare all veggies.
  • Place all ingredients in bowl (rice, veg).
  • Garnish bowls with avacado, green onions, sesame seeds, drizzle with cilantro.
