Taco Soup

Ingredients
- 2 pounds hamburger
- 1 yellow or red onion
- 4 tablespoons of taco seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 cans of red kidney or black beans or combo
- 2 cans fire roasted tomatoes
- 1 bag of frozen corn
- 4 cups chicken or vegetable stock
- Optional toppings: tortilla strips, cheese, sour cream, avocado or guacamole
Instructions
- Turn instant pot to sauté and pour some oil in.
- Begin browning hamburger and dice onion.
- Put in onion while hamburger continues to cook.
- Once hamburger is browned, add chicken stock, seasonings, tomatoes and corn.
- Let soup come to a simmer and then add beans. Simmer 10 minutes.
