Taco Soup

Ingredients

  • 2 pounds hamburger
  • 1 yellow or red onion
  • 4 tablespoons of taco seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cans of red kidney or black beans or combo
  • 2 cans fire roasted tomatoes
  • 1 bag of frozen corn
  • 4 cups chicken or vegetable stock
  • Optional toppings: tortilla strips, cheese, sour cream, avocado or guacamole

Instructions

  • Turn instant pot to sauté and pour some oil in.
  • Begin browning hamburger and dice onion.
  • Put in onion while hamburger continues to cook.
  • Once hamburger is browned, add chicken stock, seasonings, tomatoes and corn.
  • Let soup come to a simmer and then add beans. Simmer 10 minutes.
