Taco Lasagna

Ingredients
- 1 lbs ground beef or turkey
- 1 onion
- 2 bell peppers
- 1/8 cup taco seasoning
- 1-16 oz taco sauce
- 2-15 oz cans crushed tomatoes
- 1 to 2-15 oz can refried beans
- 16 oz lactose free cottage cheese
- 1-2 cups mixed veg or corn
- 2 cups shredded cheese divided
- 1/2 tsp salt
- 15-20 corn toastadas
- Optional: 2 TBSP ranch, cilantro, olives
Instructions
- Preheat oven to 425 F
- In instapot or large dutch oven over medium heat, cook ground meat with onions until brown (8-10 minutes).
- While cooking, chop bell peppers and add to pot once cooked.
- Add taco seasoning, taco sauce, crushed tomatoes, and water if needed to thin. Cook until simmering and stir in refried beans until full incorporated. Remove from heat
- In medium bowl, combine cottage cheese, veg, and 1.5 cups of shredded cheese and salt.
- In bottom of 9x13 inch pan, spread 2 cups of meat sauce. Layer with corn toastadas, then top with another 2 cups of meat sauce.
- Layer 1.5 cups of cottage cheese mixture followed by corn toastadas and then meat sauce. Repeat this step 2 more times. Cover and bake for 30 minutes.
- Uncover and top with cheese and optional olives. Bake additional 15 minutes. Remove from oven and let sit for 5-10 minutes before serving and top with optional ranch and cilantro.
