Sweet Thai Chili Burgers

Ingredients
- 2 large sweet potatoes
- 2-3 green onions
- 1 thumb of ginger
- 1-2 cloves of garlic
- 4 TBSP Mayo
- 2 TBSP soy sauce
- 10 oz ground beef
- 2 hamburger buns
- 1 oz sweet Thai chili sauce
- Handful crispy friend onions
Instructions
- Preheat oven 425 degrees, wash produce.
- Cut potatoes into 1/2 inch thick wedges. Toss on baking sheet with oil, salt and pepper. Roast for 30-35 minutes.
- While potatoes bake, trim and mince green onions, separating the whites from greens. Peel ginger and garlic and mince both separately.
- In small bowl, combine mayo, green scallions, 3/4 tsp soy sauce (save rest for later), 1/4 tsp ginger (save rest for later) and 1/2 tsp sugar.
- Large bowl, combine beef, white scallions, the remaining soy sauce, ginger, and garlic. For into 2 patties wider than bun.
- When potatoes have 10 minutes left, heat a drizzle of oil in large pan on medium-high heat. Add patties and cook ~3-5 minutes each side. While burgers cook, toast buns.
- Spread cut sides of buns with aioli (save some for dipping), then fill with patties, chili sauce, and crisp onions.
- Serve burgers and fries with aioli on the side.
