Spinach Rice

Ingredients
- 2 cup basmati rice rinsed and drained
- 6 cups fresh spinach/chopped
- 1 can, canned chickpeas
- 2 medium onion diced
- 2 tablespoon ginger & garlic / finely chopped
- 2 tablespoons garam masala powder
- 2 tablespoons cumin powder
- 1 tsp turmeric powder
- 1 tablespoon red chill powder
- 4 tablespoons lime juice
- 2 1/2 cup of water
- 2 tsp oil
- salt to taste
- toppings: nuts, crasins
Instructions
- Press saute mode on Instant Pot. Add oil and once it’s hot, add ginger and chopped onions and give it a stir
- Add chopped spinach leaves, chickpeas, salt to taste, garam masala powder, cumin powder, red chili powder, and the washed rice and water give a stir
- Close the lid on the pot, and turn the valve from VENTING to SEALING position
- Press CANCEL button on Instant Pot. Set the pot to MANUAL/PRESSURE COOK button (High Pressure) and set the timer to 6 minutes
- When done. Natural Pressure Release for 5 minutes and then do a QUICK RELEASE
- Remove lid away from you, add lime juice, mix well, top with nuts and crasins
- Spinach Rice is ready
