Spinach Rice

Ingredients

  • 2 cup basmati rice rinsed and drained
  • 6 cups fresh spinach/chopped
  • 1 can, canned chickpeas
  • 2 medium onion diced
  • 2 tablespoon ginger & garlic / finely chopped
  • 2 tablespoons garam masala powder
  • 2 tablespoons cumin powder
  • 1 tsp turmeric powder
  • 1 tablespoon red chill powder
  • 4 tablespoons lime juice
  • 2 1/2 cup of water
  • 2 tsp oil
  • salt to taste
  • toppings: nuts, crasins

Instructions

  • Press saute mode on Instant Pot. Add oil and once it’s hot, add ginger and chopped onions and give it a stir
  • Add chopped spinach leaves, chickpeas, salt to taste, garam masala powder, cumin powder, red chili powder, and the washed rice and water give a stir
  • Close the lid on the pot, and turn the valve from VENTING to SEALING position
  • Press CANCEL button on Instant Pot. Set the pot to MANUAL/PRESSURE COOK button (High Pressure) and set the timer to 6 minutes
  • When done. Natural Pressure Release for 5 minutes and then do a QUICK RELEASE
  • Remove lid away from you, add lime juice, mix well, top with nuts and crasins
  • Spinach Rice is ready
