Spanish Style Potatoes With Chorizo

Ingredients

  • 1 pound potatoes, chopped into byte sized chunks
  • 1 head broccoli, cut into florets (about 4 cups)
  • 1 pound smoked chorizo (cut into rounds, or cooked ground chunks)
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh oregano

Instructions

  • Heat your oven to 400F
  • In a mixing bowl, combine all the ingredients except for chorizo and mix.
  • Pour onto a sheet pan in a single layer.
  • Bake 20 minutes stirring halfway through.
  • Add chorizo to the sheet pan, mix again, and place back in over for another 10-20 minutes.
  • Season to taste with salt and pepper.
