Spanish Style Potatoes With Chorizo

Ingredients
- 1 pound potatoes, chopped into byte sized chunks
- 1 head broccoli, cut into florets (about 4 cups)
- 1 pound smoked chorizo (cut into rounds, or cooked ground chunks)
- 2 tablespoons olive oil
- 2 teaspoons paprika
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh oregano
Instructions
- Heat your oven to 400F
- In a mixing bowl, combine all the ingredients except for chorizo and mix.
- Pour onto a sheet pan in a single layer.
- Bake 20 minutes stirring halfway through.
- Add chorizo to the sheet pan, mix again, and place back in over for another 10-20 minutes.
- Season to taste with salt and pepper.
