Spanish Rice

Ingredients

  • 1 pound lean ground beef
  • 1 large onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 can (15 ounces) tomato sauce
  • 1 can (14-1/2 ounces) no-salt-added diced tomatoes
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1.5 cups rice (brown or white)
  • 2.5 cups of water or beef broth

Instructions

  • In a large pot, combine seasonings, tomato sauce, diced tomatoes, rice, and water; bring to a simmer.
  • In a large skillet, cook beef, onion and pepper over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain.
  • Combine all ingredients in the large pot, let cook until desired consistency.
