Spaghetti Carbonara

Ingredients
- 3/4 tsp salt
- 8 strips bacon
- 1-16 oz GF spaghetti pasta
- 1 frozen bag of peas or peas/carrots
- 3 eggs+1 yolk room tepm
- 1/2 cup parmesan + 2 Tbsp
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400 F, line sheet pan with parchment paper.
- Boil large stockpot with salted water.
- Place bacon on prepared sheet pain and bake for 15 minutes
- Meanwhile, add spaghetti to stockpot and cook according to package BUT IN FINAL 1-2 minutes reserve 1.5 cups of pasta water and then add frozen veg.
- Chop cooked bacon into bite size pieces.
- In small bowl, whisk eggs, yolk, and 1/2 cup parm.
- Drain pasta/veg and return to warm stockpot (off heat), add bacon, salt, pepper, and 1/4 cup pasta water.
- Slowly stir in egg mixture into pasta (a creamy sauce will start to form). If sauce is too thick, add a bit more pasta water.
- Garnish with more parmesan, chili flakes if desired and serve.
