Pumpkin Pie Crustless

Ingredients

  • 1- 15 oz can pumpkin puree
  • 1/3 heaping cup sweetner of choice
  • 1 heaping tsp cinnamon
  • 1 heaping tsp pumpkin pie spice
  • 1/2 cup vanilla protein powder (about 2 scoops)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 eggs
  • 1 cup almond milk

Instructions

  • Preheat oven to 350 degrees and oil 9 inch pie dish.
  • Whisk pumpkin, sweetner, spices, vanilla, protein powder in large bowl.
  • Add eggs and whisk.
  • Stir in milk until fully combined and mixture is silky.
  • Pour batter into prepared pie dish and smooth top.
  • Bake for 45 minutes. Check for doneness with fork and color on top. If needs more time, turn down oven temp to 325 degrees and bake for another 5 minutes.
  • Cool completely before slicing. Chill for 2 hours for best texture.
