Pumpkin Bars

Ingredients

  • 2/3 cup oil (i use avocado oil)
  • 2/3 cup brown sugar
  • 1 cup pumpkin puree
  • 1 egg (or a flax egg)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 & 1/3 cup flour (i use white whole wheat)
  • 1 tsp baking soda
  • chocolate chips, to taste

Instructions

  • Combine oil, brown sugar, pumpkin, egg and vanilla in a bowl and mix well.
  • Add cinnamon, flour, baking soda and chocolate chips.
  • Stir until just mixed.
  • Spoon into 9×9 pan lined with parchment paper and bake at 375 for 35-40 min.
