Pumpkin Bars

Ingredients
- 2/3 cup oil (i use avocado oil)
- 2/3 cup brown sugar
- 1 cup pumpkin puree
- 1 egg (or a flax egg)
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 & 1/3 cup flour (i use white whole wheat)
- 1 tsp baking soda
- chocolate chips, to taste
Instructions
- Combine oil, brown sugar, pumpkin, egg and vanilla in a bowl and mix well.
- Add cinnamon, flour, baking soda and chocolate chips.
- Stir until just mixed.
- Spoon into 9×9 pan lined with parchment paper and bake at 375 for 35-40 min.
