Pot Roast

Ingredients

  • 2 lbs roast
  • 1.5 lbs any potatoes
  • 4-6 large carrots
  • 1 onion
  • 4 cups beef stock
  • 1 tsp minced garlic
  • 1 tsp Italian seasoning
  • 1/2 tsp salt and pepper each
  • 1/4 cup water for gravy
  • 2 TBSP cornstarch

Instructions

  • Cut all veggies into large chunks. If using baby potatoes, no need to cut them.
  • Add roast to crock pot and then add veggies around roast.
  • Add seasonings.
  • Add beef stock.
  • Cook and cover on low 8 hours or on high for 5-6.
  • Shred beef.
  • Make the gravy. In small bowl, whisk together 1/4 c of water and the cornstarch.
  • Remove 2 cups liquid from crock pot and place in sauce pan.
  • Whisk cornstarch mixture in with beef juice in sauce pan.
  • Bring to boil, stirring frequently for 3-5 min until begins to thicken. It’ll thicken with cooling more.
  • Drizzle gravy over the roast and veggies.
