Orzo With Lemon and Peas

Ingredients
- 1 Tbsp. Olive Oil or butter
- 3 cloves minced garlic
- 2 cups Low sodium Broth
- 1 teaspoon Italian Seasoning
- 8 oz Orzo Pasta (1 1/2 cups dry)
- 1/2 cup sweet peas
- 1 cup Grated Parmesan Cheese or nutritional yeast
- 2 tbsp. lemon juice
- Salt and freshly ground black pepper - adjust per taste
- Red pepper flakes - optional for garnish
- 1 tbsp chopped fresh Basil Leaves, optional garnish
Instructions
- Press the SAUTE button on Instant Pot. Once it displays HOT, add the Oil or butter.
- Add the Orzo and minced garlic. Stir for a couple minutes till orzo gets toasty.
- Add the nutritional yeast, seasoning, sweet peas and broth. Stir well. Cancel SAUTE.
- Place the lid on. Set the Steam Release Knob to Sealing position. Press the Pressure Cook/Manual button and select 4 minutes.
- When the cooking has finished, wait for a couple minutes and release the pressure by moving the Steam Release Knob to the Venting position (Quick Pressure Release).
- When the silver pin in the lid drops down, open the lid. Let the steam settle down.
- Stir in the cheese and lemon juice. Using the fork, gently fluff the pasta and mix it well. Add salt and freshly ground pepper. Garnish with fresh herbs.
