Orange Pork Tenderloin With Broccolini and Sweet Potatoes

Ingredients
- 1/2 cup plus 2 tbsp orange juice
- 1 1/2 Soy Sauce
- 1 lb pork tenderloin
- 2 sweet potatoes
- 2 oranges or 6-8 mandarin oranges
- 4 tbsp olive oil
- 1 Tbsp pepper
- 1 tsp minced garlic
- 1 tsp salt
- 1 1/2 broccoli or Broccolini
Instructions
- Combine 1/2 cup orange juice and soy sauce in large resealable bag. Add pork tenderloin and seal. Turn bag to evenly coat pork with marinade. Refrigerate 3-5 hours turning bag occasionally.
- Preheat oven 350 degrees. Spray 2 large rimmed baking spans with nonstick spray and set aside.
- Cut sweet potatoes in half lengthwise and then cut each half lengthwise again into 1/4 inch thick slices.
- Cut unpeeled oranges in 1/4 inch slides.
- Mix sweet potatoes and oranges with 2 tbsp olive oil, pepper, garlic, and salt
- Spread evenly on one baking sheet and roast 20 minutes or until sweet potato begins to soften, turning halfway through.
- Remove pork tenderloin from marinade and discard marinade. Pat tenderloin dry with paper towel.
- Heat 1 tbsp olive oil in large nonstick skillet over medium high heat. Add pork tenderloin to skillet and cook 5-6 minutes or until golden brown on all sides. Place tenderloin in baking pan with sweet potatoes and oranges.
- Roast pork tenderloin, sweet potatoes and oranges together for 15-18 minutes or until pork reaches 145 degrees (Newstrom’s like longer heat time).
- Brush pork with remaining 2 tbsp of orange juice, cover loosely with foil and let stand 10 minutes.
- Cut broccoli lengthwise and toss in 1 Tbsp olive oil. Place in other prepared baking pan and roast 9-11 minutes
- Slice pork and serve all.
