Moo Shu Pork Bowls

Ingredients

  • 2 Scallions
  • 1 Lime
  • 10 oz ground pork
  • 6 oz shredded red cabbage
  • 2 TBSP hoisin Sauce
  • 1 oz Sweet Thai Chili Sauce
  • 4 TBSP Sweet Soy Glaze
  • 1/2 Cup Jasmine Rice
  • 1 TBSP Sesame seeds
  • Butter

Instructions

  • Wash/dry produce.
  • Rinse and cook rice in rice cooker.
  • While rice cooks, thinly slice scallions, separate whites and greens.
  • Quarter limes.
  • Heat drizzle of oil in large pan over medium-high heat.
  • Add ground pork until browned.
  • Stir in scallion whites and cabbage into pan with pork.
  • Cook stirring occasionally until tender (2-3 minutes).
  • Stir in hoisin, chili sauce, 2.5 TBSP sweet soy glaze, and 1/2 tsp sugar until thoroughly combined.
  • Turn off heat.
  • Taste and season with juice from half a lime, salt and pepper.
  • Fluff rice with fork, stir in 1 TBSP butter until melted.
  • Season with salt and pepper.
  • Divide rice between bowls, top with pork, sprinkle green scallions and sesame seeds.
