Miso Peach Pork Chops

Ingredients
- 1 thumb ginger or 2 tsp minced
- 1 clove garlic
- 1 lime or lime juice
- 10 oz pork chops
- 6 oz green beans
- 1/2 cup jasmine rice
- 1 TBSP peach jam
- 1 TBSP miso concentrate
- 2 TBSP butter
Instructions
- Preheat oven 450 degrees. Wash/dry produce.
- Peel/mince ginger and garlic. Zest and quarter lime if present.
- Cook rice in rice cooker with water, big pinch salt, 1/2 the ginger and keep covered until ready to serve.
- Pat pork dry and season all over with salt/pepper.
- Trim green beans and toss on baking sheet with oil, salt and pepper. Cook for 10-12 minutes.
- Air fry or grill pork.
- Put pan on medium heat and add drizzle oil, garlic, and remaining ginger until fragrant (30 sec).
- Add 1/4 cup water, jam and miso concentrate. Cook and stir until thickened 3-4 min.
- Remove from heat and stir in 2 TBSP butter and squeeze of lime juice
- Fluff rice and stir in lime zest and pinch of salt.
- Serve pork, rice, and green beans. Drizzle pork and rice with sauce. Lime wedges can be served on side if present.
