Miso Peach Pork Chops

Ingredients

  • 1 thumb ginger or 2 tsp minced
  • 1 clove garlic
  • 1 lime or lime juice
  • 10 oz pork chops
  • 6 oz green beans
  • 1/2 cup jasmine rice
  • 1 TBSP peach jam
  • 1 TBSP miso concentrate
  • 2 TBSP butter

Instructions

  • Preheat oven 450 degrees. Wash/dry produce.
  • Peel/mince ginger and garlic. Zest and quarter lime if present.
  • Cook rice in rice cooker with water, big pinch salt, 1/2 the ginger and keep covered until ready to serve.
  • Pat pork dry and season all over with salt/pepper.
  • Trim green beans and toss on baking sheet with oil, salt and pepper. Cook for 10-12 minutes.
  • Air fry or grill pork.
  • Put pan on medium heat and add drizzle oil, garlic, and remaining ginger until fragrant (30 sec).
  • Add 1/4 cup water, jam and miso concentrate. Cook and stir until thickened 3-4 min.
  • Remove from heat and stir in 2 TBSP butter and squeeze of lime juice
  • Fluff rice and stir in lime zest and pinch of salt.
  • Serve pork, rice, and green beans. Drizzle pork and rice with sauce. Lime wedges can be served on side if present.
