Mexican Lentil Rice Bake

Ingredients

  • 1 onion, diced
  • 1 cup red lentils
  • 1 cup rice
  • 1 bell pepper, diced
  • 2 Tbs minced garlic
  • 4 cups vegetable broth
  • 1 jar (16oz) salsa
  • 1 can black beans, drained, rinsed
  • 2 Tbs taco seasoning
  • Optional: Shredded cheese, cilantro

Instructions

  • Preheat oven to 375
  • Combine onions, lentils, rice, bell peppers, salsa, black beans, and taco seasoning in the 3 qt baking dish, cover tightly with foil
  • Bake for an hour and a half
  • Serve in bowls with shredded cheese on top
