Mexican Lentil Rice Bake

Ingredients
- 1 onion, diced
- 1 cup red lentils
- 1 cup rice
- 1 bell pepper, diced
- 2 Tbs minced garlic
- 4 cups vegetable broth
- 1 jar (16oz) salsa
- 1 can black beans, drained, rinsed
- 2 Tbs taco seasoning
- Optional: Shredded cheese, cilantro
Instructions
- Preheat oven to 375
- Combine onions, lentils, rice, bell peppers, salsa, black beans, and taco seasoning in the 3 qt baking dish, cover tightly with foil
- Bake for an hour and a half
- Serve in bowls with shredded cheese on top
