Mexican Lentil Bake

Ingredients

  • 1 pound ground beef
  • 1-2 onion, diced
  • 2 cup red lentils
  • 2-3 bell pepper, diced
  • 2 Tbs minced garlic
  • 4 cups beef bone broth
  • 1 jar (16oz) salsa
  • 1 can black beans, drained, rinsed
  • 2 Tbs taco seasoning
  • Optional: Shredded cheese, cilantro

Instructions

  • Combine onions, lentils, rice, bell peppers, salsa, black beans, and taco seasoning in instant pot
  • Cook on high pressure for 10 minutes, natural release for 10 minutes
  • Brown ground beef in a skillet, and add taco seasoning to taste
  • Serve in bowls with shredded cheese on top
