Mashed Cauliflower

Ingredients
- 1 head cauliflower (2 lbs), cut into 1/2 inch pieces
- 1 cup chicken broth
- 2 TBSP butter
- 1 tsp chopped thyme
- Pepper to taste
Instructions
- In a large pot, bring chicken broth to a boil
- Add cauliflower and bring back to boil
- Cover, reduce heat to low for 20 minutes or until cauliflower very tender
- Use slotted spoon to transfer cauliflower to food processor
- Add 3 TBSP of chicken broth from pot, thyme, and butter to food processor
- Process until smooth
- Add salt/pepper to taste
