Mashed Cauliflower

Ingredients

  • 1 head cauliflower (2 lbs), cut into 1/2 inch pieces
  • 1 cup chicken broth
  • 2 TBSP butter
  • 1 tsp chopped thyme
  • Pepper to taste

Instructions

  • In a large pot, bring chicken broth to a boil
  • Add cauliflower and bring back to boil
  • Cover, reduce heat to low for 20 minutes or until cauliflower very tender
  • Use slotted spoon to transfer cauliflower to food processor
  • Add 3 TBSP of chicken broth from pot, thyme, and butter to food processor
  • Process until smooth
  • Add salt/pepper to taste
