Lemon Veggie Tortellini Salad

Ingredients
- 5 Tbsp. olive oil divided
- 1 lb veggie blend chopped (asparagus, zucchini, squash)
- 2 Tbsp pine nuts
- 2 Tbsp fresh lemon juice
- 3 tsp Dijon mustard
- 2 tsp honey
- 1 tsp lemon pepper seasoning
- 1/2 tsp dried basil
- 1/4 tsp salt
- 1/2 tsp garlic powder
- 1 pkg (19 oz) frozen vegan tortellini
- 1 c quartered grape tomatoes or diced tomatoes
- Toppings: Parmesan, basil, pine nuts
Instructions
- Boil large pot of salted water.
- Heat 1 Tbsp olive oil in skillet with medium heat.
- Add veggie blend and pine nuts.
- Cook for about 5 minutes or until veggies are crisp tender, stirring occasionally. Remove from heat.
- While veggies cook, prepare dressing; whisk lemon juice, mustard, honey, lemon pepper, basil, salt, and garlic powder in a bowl.
Slowly add reminding 4 Tbsp olive oil, whisking continuously; set aside.
- Add tortellini to boiling water. Cook according to package. Drain and rinse under cold water.
- Toss tortellini, dressing, and veggies together. Add tomatoes.
- Garnish with basil, parmesan, and pine nuts.
