Italian Sausage Soup

Ingredients

  • 1 lb italian sausage or turkey
  • 1 tbsp garlic
  • 1 (14.5 oz) can italian stewed tomatoes
  • 1 (14.5 oz) can great northern beans (undrained)
  • 1 cup sliced carrots
  • 1 large zucchini, cubed
  • 2 cups spinach - packed, rinsed, and torn
  • 1/4 tsp salt and pepper each

Instructions

  • Gather all ingredients.
  • Heat Dutch oven over med-high heat. Add meat and garlic and cook until browned.
  • Stir in broth, tomatoes, and carrots. Season with salt/pepper. Reduce heat to med-low, cover and simmer 15 min.
  • Stir in beans with its liquid and zucchini. Cover and simmer 15 min until veg tender.
  • Remove from heat and add spinach. Replace lid to allow spinach to wilt.
  • Stir and serve.
