Italian Sausage Soup

Ingredients
- 1 lb italian sausage or turkey
- 1 tbsp garlic
- 1 (14.5 oz) can italian stewed tomatoes
- 1 (14.5 oz) can great northern beans (undrained)
- 1 cup sliced carrots
- 1 large zucchini, cubed
- 2 cups spinach - packed, rinsed, and torn
- 1/4 tsp salt and pepper each
Instructions
- Gather all ingredients.
- Heat Dutch oven over med-high heat. Add meat and garlic and cook until browned.
- Stir in broth, tomatoes, and carrots. Season with salt/pepper. Reduce heat to med-low, cover and simmer 15 min.
- Stir in beans with its liquid and zucchini. Cover and simmer 15 min until veg tender.
- Remove from heat and add spinach. Replace lid to allow spinach to wilt.
- Stir and serve.
