Hawaiian Chicken

Ingredients

  • 1/2 cup BBQ sauce
  • 1/8 cup coconut aminos
  • 1/8 cup Avacado oil
  • 1/8 cup chopped cilantro
  • 1/8 cup sliced scallions
  • 1 TBSP lemon juice
  • 2 tsp smoked paprika
  • 1 TBSP minced/grated ginger
  • 1 TBSP minced garlic
  • 1 TBSP pepper
  • Salt to taste
  • 1 red bell pepper chopped 1 inch
  • 1 red onion chopped 1 inch
  • 1 cup cubed pineapple
  • 2 lbs chicken breast

Instructions

  • Mix BBQ, coconut aminos, 1 TBSP cilantro and scallions each, lemon juice, paprika, ginger, garlic and 1 tsp salt and pepper in a bowl.
  • Cut bell pepper, pineapple and onion and place in instant pot then top with chicken. Sprinkle 1-2tsp of salt and pepper on top.
  • Pour sauce over chicken and cook chicken.
  • Unpressurized instant pot and shred chicken.
  • Return chicken to instant pot with sauce and stir together.
  • Serve and garnish with remaining cilantro and scallions.
