Hawaiian Chicken

Ingredients
- 1/2 cup BBQ sauce
- 1/8 cup coconut aminos
- 1/8 cup Avacado oil
- 1/8 cup chopped cilantro
- 1/8 cup sliced scallions
- 1 TBSP lemon juice
- 2 tsp smoked paprika
- 1 TBSP minced/grated ginger
- 1 TBSP minced garlic
- 1 TBSP pepper
- Salt to taste
- 1 red bell pepper chopped 1 inch
- 1 red onion chopped 1 inch
- 1 cup cubed pineapple
- 2 lbs chicken breast
Instructions
- Mix BBQ, coconut aminos, 1 TBSP cilantro and scallions each, lemon juice, paprika, ginger, garlic and 1 tsp salt and pepper in a bowl.
- Cut bell pepper, pineapple and onion and place in instant pot then top with chicken. Sprinkle 1-2tsp of salt and pepper on top.
- Pour sauce over chicken and cook chicken.
- Unpressurized instant pot and shred chicken.
- Return chicken to instant pot with sauce and stir together.
- Serve and garnish with remaining cilantro and scallions.
