Ingredients

  • 12 oz chicken sausage-sliced
  • 12 oz GF gnocchi
  • 2 cups butternut squash-peeled/diced 1/2 squares
  • 2 cups kale- shredded
  • 1 yellow or red onion - sliced
  • 3 TBSP neutral oil
  • 2-3 TBSP italian seasoning
  • 1-2 tsp garlic powder
  • 1-2 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp pepper
  • Garnish: red pepper flakes, nutritional yeast, neutral oil

Instructions

  • Preheat oven to 400 degrees
  • Wash/cut veggies/meat and place on baking sheet (EXCEPT KALE)
  • Add oil and seasonings and mix.
  • Bake for 25 minutes.
  • While baking, start to boil water for gnocchi , make gnocchi and massage kale with oil/seasonings.
  • Add/mix in kale and gnocchi in the last 7 minutes of bake time.
  • Serve and garnish with above as desired.
