Ingredients
- 12 oz chicken sausage-sliced
- 12 oz GF gnocchi
- 2 cups butternut squash-peeled/diced 1/2 squares
- 2 cups kale- shredded
- 1 yellow or red onion - sliced
- 3 TBSP neutral oil
- 2-3 TBSP italian seasoning
- 1-2 tsp garlic powder
- 1-2 tsp smoked paprika
- 1 tsp salt
- 1 tsp pepper
- Garnish: red pepper flakes, nutritional yeast, neutral oil
Instructions
- Preheat oven to 400 degrees
- Wash/cut veggies/meat and place on baking sheet (EXCEPT KALE)
- Add oil and seasonings and mix.
- Bake for 25 minutes.
- While baking, start to boil water for gnocchi , make gnocchi and massage kale with oil/seasonings.
- Add/mix in kale and gnocchi in the last 7 minutes of bake time.
- Serve and garnish with above as desired.
