Grilled Shrimp Po'Boy

Ingredients

  • Shrimp (~6-8 per sandwich)
  • 4 Baguettes
  • 1.5 TBsp melted butter
  • 1.5 Tbsp old bay seasoning
  • 4-6 Butterhead lettuce leaves
  • Dill pickle slices (4-6 per sandwich)

Remoulade sauce

  • 1/2 cup mayo
  • 1 Tblsp lemon juice
  • 1 Tblsp sweet relish
  • 1/2 Tblsp paprika
  • 2 Tblsp Dijon mustard
  • 1 tsp creole seasoning
  • 1 tsp horseradish
  • 1 clove grated garlic
  • 1 tsp hot sauce optional

Instructions

  • Preheat grill with greased rack over medium heat.
  • Remove tails from shrimp and then brush with melted butter and sprinkle Old Bay seasoning.
  • Grill shrimp for 3-4 minutes, turning once until shrimp are pink.
  • Split baguettes part way (similar to hot dog) lengthwise. Toast baguettes.
  • Whisk ingredients fro remoulade together.
  • Spread remoulade sauce on cut ends of bread.
  • Layer baguette bottoms with large butterhead lettuce leaves, and dill pickle slices.
  • Drizzle hot sauce as desired.
