Greek Crockpot Chicken

Ingredients
- 2-3 chicken breasts
- 1 TBSP minced garlic
- 1-2 TBSP lemon juice
- 1/3c virgin olive oil
- 1/4c red wine vinegar
- 1 TBSP Dijon mustard
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp curry powder
- S & P to taste
- Toppings: dairy free feta, cherry tomatoes, diced cucumber, etc
Instructions
- Combine garlic, lemon juice, EVOO, red wine vinegar, and Dijon in a bowl.
- Season thawed chicken generously with all dried seasonings.
- Place seasoned chicken in crockpot on low for 4-6 hours.
- While chicken cooks, prepare the toppings.
- Shred chicken.
- Place chicken on bread or top a salad.
