Farmers Market Quinoa Salad

Ingredients
- 6 cup cooked quinoa (from 2 cup uncooked)*
- 4 cup roughly chopped baby spinach
- 2 bell peppers chopped (red give it a nice color)
- 2 cups cucumber, diced
- 1 cup cilantro, chopped
- 1 bag of frozen sweet corn, cooked
- 2 medium avocados, peeled, pit removed, and diced
- 2 medium red onions, minced
- 2 tablespoons dried basil
- 8 tablespoons lemon juice
- 4 tablespoons olive oil
- 2 teaspoons salt, more or less to taste
- 2 teaspoons pepper, more or less to taste
Instructions
- Add cooked quinoa to a large bowl.
- Add spinach, bell peppers, cucumber, corn, onion, and basil.
- Drizzle lemon juice and olive oil over the salad.
- Add salt and pepper and stir to coat well. Taste and add additional lemon juice, basil, salt or pepper, as desired.
- Top with diced avocado
- Serve warm, or chill until ready to serve.
