Dinner Rolls

Ingredients
- 2 cups unbleached all-purpose flour
- 1 packet rapid-rise yeast
- 2 Tbsp sugar
- 1/2 tsp salt
- 1/4 cup water
- 1/2 cup unsweetened plain plant based milk
- 2 Tbsp vegan + more for topping
Instructions
- Combine 3/4 cup flour, yeast, sugar and salt in large mixing bowl.
- In separate small mixing bowl, microwave water, almond milk, and butter until 110-120 degrees. If too hot, it can kill the yeast.
- Add wet to dry ingredients. Whisk or beat 2 minutes, scraping side as needed.
- Add 1/4 cup more flour and beat another 2 minutes. Continue adding 1/4 cups of flour at a time 4 more times until you achieve a soft dough. Ok to add more if too sticky. Transfer lightly dough to a lightly floured surface and knee until smooth and elastic. Then let rise 10 minutes.
- Grease 8 inch round pan.
- Divide the dough into 12 pieces, shape into balls, and place in greased pan. Cover and let rise in warm place until doubled 40-45 minutes.
- Preheat oven to 375 degrees and brush tops with additional butter. Bake 18-20 minute or until fluffy and golden brown.
- Best results, serve immediately. Store loosely covered with kitchen towel up to 3 days on counter.
