Cream of Mushroom Soup

Ingredients

  • 1 can of full fat coconut milk
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1/8 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 can mushrooms (pieces and stems), drained (6.5 oz)

Instructions

  • Put the coconut milk, flour, starch, oil, salt, onion powder, and garlic powder in your blender. Blend until smooth, about 30 seconds.
  • Pour the soup mixture into a small saucepan over medium-low heat and add the mushrooms. Cook for about 10 minutes, whisking often.
