Chickpea Salad Sandwiches

Ingredients
- 2 15oz cans chickpeas
- 1 cup diced celery
- 2 tsp fresh dill, finely diced/minced
- 1/2 cup diced spicy pickles
- 4 tsp fresh lemon juice
- 1/2 tsp salt
- Fresh pepper to taste
- 1/4 cup vegan mayo
- 1/4 teaspoon garlic powder
Instructions
- Drain chickpeas and place in a large bowl
- Mash well using the bottom of a mason jar or cup
- Dice the celery and pickles and add them to the chickpeas
- Mince the fresh dill and add to the chickpeas
- Add remaining ingredients and mix well
- Serve with lettuce, avocado, or other toppings for your sandwich
