Chickpea Salad Sandwiches

Ingredients

  • 2 15oz cans chickpeas
  • 1 cup diced celery
  • 2 tsp fresh dill, finely diced/minced
  • 1/2 cup diced spicy pickles
  • 4 tsp fresh lemon juice
  • 1/2 tsp salt
  • Fresh pepper to taste
  • 1/4 cup vegan mayo
  • 1/4 teaspoon garlic powder

Instructions

  • Drain chickpeas and place in a large bowl
  • Mash well using the bottom of a mason jar or cup
  • Dice the celery and pickles and add them to the chickpeas
  • Mince the fresh dill and add to the chickpeas
  • Add remaining ingredients and mix well
  • Serve with lettuce, avocado, or other toppings for your sandwich
