Chicken Pesto Rice

Ingredients
- 2 cups of rice
- 2 pounds of chicken
- 2 packages of pesto mix
- 2 jars of pesto mix
- 4 cups of water
- 1 tsp salt
- 1 tsp pepper
Instructions
- Cook chicken in instant pot (Poultry setting, 15 minutes)
- Once the instant pot timer is done, quick release pressure
- Shred chicken
- Rinse instant pot
- Put shredded chicken, uncooked rice, pesto, water, salt, and pepper into the instant pot
- Optional, add broccoli or other add-ins
- Cook using rice setting (8 minutes), and let pressure naturally release for 15 minutes
