Cauliflower Tikka Masala

Ingredients

  • 2 cups rice
  • 1 small head cauliflower (cut into small pieces)
  • 1/2 white onion
  • 2 tablespoons vegan butter
  • 2 cups of non dairy milk
  • 1 cup of tomato sauce
  • 3 or 4 crushed garlic cloves
  • 2 teaspoons Paprika
  • 3 teaspoons turmeric
  • 2 teaspoons coriander
  • 2 teaspoons ginger
  • 1/2 teaspoon cayenne
  • 4 teaspoons Garam Masal
  • 2 teaspoons salt
  • 3 teaspoons pepper

Instructions

  • Simmer onion and garlic in butter until tender
  • Add spices, coconut milk, tomato sauce
  • Let simmer about 10 minutes, stir occasionally
  • Add cauliflower
  • Mix and cover
  • Simmer 25 minutes
  • Start cooking rice
  • Serve with rice
