Banana Bread

Ingredients
- 4 TBSP softened butter
- 2 eggs
- Splash vanilla
- 2-3 very ripe bananas
- 2/3 cup monk fruit (or sugar)
- 1 1/3 cup GF flour
- 3/4 tsp salt
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp nutmeg
Instructions
- Preheat oven 350 degrees
- Mash bananas finely
- Combine butter, eggs, vanilla, and monk fruit
- Combine flour, salt, baking soda and powder and spices
- Mix wet and dry ingredients together until well blended
- Optional add nuts or chocolate chips ~1/2 cup
- Pour dough into greased 9x5 loaf pan and/or with parchment paper
- Bake for 35 minutes at 350 and then turn down to 325 and bake for 15 minutes – Make sure fully cooked with toothpick
- Let bread cool in pan for 5-10 minutes before removing
