Banana Bread

Ingredients

  • 4 TBSP softened butter
  • 2 eggs
  • Splash vanilla
  • 2-3 very ripe bananas
  • 2/3 cup monk fruit (or sugar)
  • 1 1/3 cup GF flour
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp nutmeg

Instructions

  • Preheat oven 350 degrees
  • Mash bananas finely
  • Combine butter, eggs, vanilla, and monk fruit
  • Combine flour, salt, baking soda and powder and spices
  • Mix wet and dry ingredients together until well blended
  • Optional add nuts or chocolate chips ~1/2 cup
  • Pour dough into greased 9x5 loaf pan and/or with parchment paper
  • Bake for 35 minutes at 350 and then turn down to 325 and bake for 15 minutes – Make sure fully cooked with toothpick
  • Let bread cool in pan for 5-10 minutes before removing
