Baked Cod

Ingredients

  • 4 TBSP butter, divided
  • 3/4 sleeve of whole wheat ritz crackers, crushed
  • 1 lbs cod loin
  • 1/2 medium lemon, juiced; other half sliced into wedges
  • 1/4 cup of broth
  • 1-2 tsp of apple cider vinegar
  • 1 TBSP chopped parsley
  • 1 TBSP green onion

Instructions

  • Preheat oven to 400 degrees.
  • Melt 2 TBSP butter in microwave in small bowl. Then stir in crushed crackers
  • Place remaining 2 TBSP butter in 7x11 baking dish and place in preheated oven to melt butter for 1-3 minutes.
  • Remove dish from oven and coat both sides of fish in melted butter and place in dish.
  • Bake cod for 12 minutes. Remove from oven and top with lemon juice, broth, apple cider vinegar, then cracker mixture.
  • Return fish to oven and bake for 12 more minutes.
  • Garnish with parsley, green onions, and lemon wedges. Serve.
