Baked Cod

Ingredients
- 4 TBSP butter, divided
- 3/4 sleeve of whole wheat ritz crackers, crushed
- 1 lbs cod loin
- 1/2 medium lemon, juiced; other half sliced into wedges
- 1/4 cup of broth
- 1-2 tsp of apple cider vinegar
- 1 TBSP chopped parsley
- 1 TBSP green onion
Instructions
- Preheat oven to 400 degrees.
- Melt 2 TBSP butter in microwave in small bowl. Then stir in crushed crackers
- Place remaining 2 TBSP butter in 7x11 baking dish and place in preheated oven to melt butter for 1-3 minutes.
- Remove dish from oven and coat both sides of fish in melted butter and place in dish.
- Bake cod for 12 minutes. Remove from oven and top with lemon juice, broth, apple cider vinegar, then cracker mixture.
- Return fish to oven and bake for 12 more minutes.
- Garnish with parsley, green onions, and lemon wedges. Serve.
