Asian Cucumber Ribbon Salad

Ingredients

Salad

  • 1 large cucumber
  • 2-3 carrots
  • 2 sliced green onions
  • 1 avocado
  • 3 TBSP roughly chopped peanuts
  • Optional: Tofu, chicken, shrimp; cilantro

Dressing:

  • 1/2 cup rice vinegar
  • 2 TBSP coconut aminos
  • 1 TBSP honey
  • 1 tsp sesame oil
  • 1 TBSP sesame seeds
  • 2 TBSP chili crisp

Instructions

  • Combine dressing ingredients and set aside
  • Make ribbons with peeler for cucumber and carrots
  • Slice green onions and chop peanuts and avocado
  • Mix all veg together (except avo) and slowly add with dressing
  • Top with avo and peanuts and cilantro and protein
