Asian Cucumber Ribbon Salad

Ingredients
Salad
- 1 large cucumber
- 2-3 carrots
- 2 sliced green onions
- 1 avocado
- 3 TBSP roughly chopped peanuts
- Optional: Tofu, chicken, shrimp; cilantro
Dressing:
- 1/2 cup rice vinegar
- 2 TBSP coconut aminos
- 1 TBSP honey
- 1 tsp sesame oil
- 1 TBSP sesame seeds
- 2 TBSP chili crisp
Instructions
- Combine dressing ingredients and set aside
- Make ribbons with peeler for cucumber and carrots
- Slice green onions and chop peanuts and avocado
- Mix all veg together (except avo) and slowly add with dressing
- Top with avo and peanuts and cilantro and protein
